“We are not murderers! We are not killers!! We are destiny helpers!!!” exclaimed by another member of the executive council of LAB, Lactobacillus bulgaricus and his partner; Streptococcus thermophiles, which are the starter (main) cultures in yogurt.


Yoghurt, which is a product of a fermented milk, is known for its characteristic refreshing and exotic taste. The main ingredient being milk and the type of milk used depends on the type of yoghurt. Whole milk for full yoghurt, low fat milk for low-fat yogurt and skim milk for nonfat yogurt. 




 When questioned on their importance in the production of this fermented food, he said,” we are the main cultures in yogurt. We ferment lactose (milk sugar) to produce lactic acid. Increase in this lactic acid decreases pH and causes the milk to clot, or form the soft gel which is one of the characteristics of yogurt. Also, this fermentation produces the flavor compound in yogurt.


“Our presence in yogurt helps human by improving their lactose digestion, improving gastrointestinal function and stimulating the immune system” said by Streptococcus.


The Advocate likened Immune system to security operatives protecting and safeguarding a country from enemies, terrorism and act of genocide. It varies depending on the developmental status of that country. Army, Air force, Navy, Police, civil defense, to mention but a few, are all security agents guiding a country. Immune system is also a conglomeration of different forces coming together to protect the body from harmful foreign agents. Many of these are different white blood cells. According to the chairman of the LAB, their presence in fermented foods helps to reproduce and stimulate more ‘soldiers’.


Speaking on the importance of yogurt to human, he said “yogurt has been found to reduce the risk of heart disease and osteoporosis, as well as aid in weight management. Highlighting the science based health benefits of natural yogurt, he said that it is rich in important nutrient, high in protein, benefit digestive health, strengthens immune system, benefit heart health and promote weight management”.


Confirming the submissions of the chairman, Lactobacillus bulgaricus, it was found out that one cup of natural yogurt truly provides 49% calcium, 38% phosphorus, 12% magnesium, 18% potassium, high vitamin B12 and Riboflavin. 


Also, yogurt provides an impressive amount of protein with about 12gram per 200gram which in turn increases energy expenditure, production of hormones and appetite regulation. Consuming yogurt with live organisms (Probiotics) lessen the uncomfortable symptoms of irritable bowel syndrome, reduce the symptoms of common gastrointestinal disorders, such as bloating, diarrhea and constipation.


It was also found out that consuming yogurt with live organisms reduce inflammation. It may also help reduce the incidence, duration and severity of the common cold. Osteoporosis, which is a condition characterized by weakening of the bones especially in the elderly can be prevented.
